There’s nothing like my mother-in-law Jeans Christmas Sugar Cookies. The flavor melts in your mouth, I have a hard time eating only one.

Ingredients
2 1/2 cups sifted flour
1 1/2 cups sifted confectioners sugar
1/2 teaspoon salt
1 cup butter
1 egg, beaten
2 tablespoons milk
2 teaspoons vanilla
Directions
Combine flour, confectioners sugar and salt and sift into bowl. Cut in butter until mixture resembles fine crumbs. Add egg, milk and vanilla; mix until dough holds together. Press into ball. Wrap and chill well. Roll 1/2 of the dough at a time on lightly floured board. Roll dough to 1/8 inch thickness. Cut into favorite Fancy Christmas shapes with floured cookie cutters. Arrange 1 inch apart on ungreased cookie sheets. Bake in moderate oven (375 degree) until done, about 8 minutes. Transfers cookies to wire racks and cool. Frost and decorate as desired.
Makes about 4 1/2 dozen cookies.
Icing
2 tablespoons melted butter
Add 1 pound box powdered sugar (save a bit)
Add 2 tablespoons milk, add more as needed to make smooth
Stir consistently and add food coloring

This recipe comes from my wife Sarah. It is a tasty addition to any Mexican dinner. The hot level can be altered, try adding jalapeno’s to bring up the spice. If you are not one who enjoys to sweat, enjoy the recipe as is.

A new staple to have at your Mexican dinners.

1/2 cup shredded cheddar
1/2 cup chopped tomatoes
1 1/2 cup thick salsa
